• 3-4 cups cooked, cooled rice (day old cold rice is great)
• 1 pound large, raw, peeled and deveined shrimp
• Cajun spice rub as needed (approx. 3-4 Tbs)
• 1 medium onion, peeled and diced
• 1/2 large red pepper, deseeded and diced
• vegetable oil for sauteing veggies
• 1 large clove garlic, peeled and minced
• approx. 1 Tbs peeled, minced fresh ginger
• 1 cup diced pineapple (canned or fresh)
• 2-3 Tbs soy sauce
• 1/3-1/2 cup chopped fresh cilantro
Once the rice is ready to go, you can start making the fried rice by adding a splash of vegetable oil to a large, heavy bottomed pan and adding 1 medium diced onion and half of a deseeded and diced red pepper and cooking those to soften.
At that point, add 1 large minced clove of garlic and an equal amount of finely minced peeled fresh ginger, add about 1 cup diced pineapple, add the cooked rice and a little splash of soy sauce and toss everything together to warm through.
Once it is nice and hot, turn the heat off and put a lid on top to keep it nice and warm.
Next, place a heavy bottomed pan or cast iron skillet on the stove top on medium high heat, then toss the raw shrimp in a mixing bowl with a little vegetable oil and a generous amount of the Cajun spice rub and then, when the pan is nice and hot, add the shrimp.
Gently flip the shrimp around as they're cooking and then, once they're cooked to your liking, add a good handful of chopped cilantro to the fried rice and it is time to eat!
To make 3 cups cooked rice, cook 1 cup medium grain rice in 2 cups water. For 4 cups cooked rice, cook 1 1/3 cups rice in 2 2/3 cups water. Or cook minute rice according to directions.
You shouldn't need any oil in the pan to cook the shrimp but, if you think it needs it, add a tiny bit.
