Let's Cook: Summer Succotash

Ingredients:
• 2 slices of bacon
• 1 tbsp reserved bacon grease
• 1 shallot (or ¼ cup onion)
• 2 ears of corn, cut off the cob (about 2 cups)
• ¼ cup water
• 1 ½ cups lima beans, cooked
• 1 cup chopped tomatoes (any variety)
• salt
• pepper
Method of preparation:
1. In a large skillet, cook 2 slices of bacon. Leave 1 tbsp of bacon drippings in the pan.
2. Sautee shallot in bacon drippings until soft, on medium-high heat.
3. Add corn and ¼ cup water to pan, stirring until corn is tender and water is evaporated.
4. Stir in cooked lima beans until heated through.
5. Right before serving, add tomatoes, salt, and a good bit of pepper. Cook until just heated through.
5. Crumble the 2 slices of bacon back into the succotash to finish.
