Cooking at Home: Ham Salad with Buttermilk Dressing

Serves 4

INGREDIENTS:

• 8-12 ounces thinly sliced deli ham
• 1 large ripe avocado, peeled, pitted and thinly sliced (or more to taste)
• 8 large radishes, thinly sliced
• Thinly sliced red onion to taste
• 1 heart of romaine, chopped
• 1/2 cup buttermilk
• 4 Tbs mayonnaise
• 1 tsp Dijon mustard
• 1 Tbs apple cider vinegar
• black pepper to taste
• 1-2 Tbs fresh chopped chives (optional)

PROCEDURE:

Use a mixing bowl to combine 1/2 cup of buttermilk with 4 Tbs of mayonnaise, 1 tsp Dijon mustard, about 1 Tbs of apple cider vinegar, a good crack of black pepper and an optional Tbs or two of finely chopped chives and whisk it up.

The dressing will thicken up a bit especially if you make it ahead of time and keep it in the fridge.

To assemble the salad, cover the bottom of a plate with a thin layer of the sliced ham and add some of the rest of the ingredients to the center of the plate and finish by drizzling some of the buttermilk dressing over the top of everything.

HINTS:

Just as good with thin sliced smoked salmon! Add a little finely chopped tarragon to the dressing as well.
