INGREDIENTS:
• Marinated diced fish
• Juice of the marinade
• Extra lime juice
• Salt and pepper, to taste
• Extra virgin olive oil
•Chiffonade cilantro
• Finely sliced scallions
• ½ julienne red onions (not including middles)
•brunoise jalapeno & poblano peppers
• rings of tri-color mini sweet bell peppers or small dice red and yellow bell peppers
• small dice carrot
• 5-6 grape tomato halves
• Garnish with:
• Sprig of cilantro
• Corn tortilla chips
Lime Marinade (for ceviche)
• 1 cup freshly squeezed lime juice
• zest of 1 lime
• ¼ cup finely minced shallots
• ¾ cup white wine
• ½ cup rice wine vinegar
• 2 tsp kosher salt
• ½ tsp finely ground black pepper
PROCEDURE:
Dice fish in even ½-inch dice. Cover completely with lime marinade. Marinate at least 1 hour before serving. Always taste for doneness before serving.
