Healthy Pasta Bolognese

Yields:


4 portions

INGREDIENTS:

• 1 oz Olive Oil

• 1 lb Lean Ground Turkey

• ½ cup Minced Onions

• 1 tbsp Chopped Garlic

• 2 tsp Dried Oregano

• 1 tbsp Dried Basil

• 1 can Crushed Tomatoes (29 oz)

• 2 cup Sliced Zucchini

• 12 oz Whole Wheat Pasta

PROCEDURE:

1. In a 2 qt sauce pot heat oil and brown the ground turkey.
2. Add in onions, garlic, and herbs and stir over medium heat for 2 minutes.
3. Add in crushed tomatoes bring to a simmer and stir.
4. Place over low heat and cover.
5. Simmer gently for 15 minutes.
6. In a 4 qt pot bring 1 gallon of water to a boil.
7. Add pasta and simmer 6 – 8 minutes, based upon manufactures recommendation.
8. Before draining add zucchini to pasta, simmer 15 seconds and drain.
9. Place pasta and veg back into the 4 qt pot and add the bologenese sauce to the pasta.
10. Simmer to thicken for 1 minute.
11. Season to taste and serve with grated romano cheese.
