Let's Cook: Pan Seared Chicken W/ Tomato, Corn Relish

Ingredients
• 4 ea Chicken Breast
• Kosher salt to taste
• Cracked pepper to taste
• Needed
• 1 oz Oil
Method of preparation
• Season the chicken with salt and pepper.
• Heat a skillet to medium high heat and add in the oil.
• Brown the chicken on both sides until it is a deep mahogany color.
• Place the chicken in the oven for 8-10 minutes at 350° until it reaches an internal temperature of 165°.
• Serve with the following relish.
Tomato Corn Relish
• 1 tsp Sugar
• ¼ cup Minced red onion
• ½ ea Lime, juiced
• ½ ea Jalapeño- Seeded and Minced
• 2 ea Ripe tomatoes - peeled, seeded, diced
• ½ cup Grilled Corn Kernels
• salt and pepper to taste
Method of preparation
• Combine onion, sugar and lime juice allow them to marinate for 30 minutes.
• Add the rest of the ingredients and season to taste with salt and pepper.
