Cooking at Home: Grilled ham & apple cheese sandwich

INGREDIENTS:

* 2 slices marbled rye bread (or plain rye or any bread you have)

* 2-3 ounces thinly sliced cheddar cheese

* 1/2 small apple, cored and thinly sliced

* 3-4 ounces thin sliced smoked ham

* Dijon mustard to taste

* Butter for outside of bread as needed

PROCEDURE:

Cut the cheese nice and thin, so it melts faster, and put a thin layer on one slice of bread, top that with some thinly sliced apple and top that with a layer of thinly sliced smoked ham.

Spread some Dijon mustard on the second slice of bread, if you're using it, and top that with more thin sliced cheese and flip that layer over on top of the ham.

Spread a generous amount of butter over the top slice of bread and add that butter side down to a medium hot nonstick pan.

Once it is in the pan, quickly and carefully spread some more butter on the top layer.

After a minute or two flip it over and press it down to help hold everything together and turn the heat down quite a bit so that it cooks through on the second side without burning.

Stay with it and continue to press it down occasionally and you may want to flip it over one or two more times as it warms through and the cheese melts from both sides.

HINTS:

To make this even more of a substantial meal, serve it alongside a simple cabbage coleslaw or even warm baked beans and applesauce for dipping.
