Corn Sticks (yields 24)
INGREDIENTS
Dry
• 1 ¼ cup all purpose flour
• 1/3 cup yellow cornmeal
• 1 ½ tbsp baking powder
• 2/3 cup sugar
Wet
• 1 egg
• 2/3 cup milk
• 2 tsp honey
• ¼ tsp vanilla
• 3 ounces corn oil
PROCEDURE
1.Blend the ingredients together for 30 – 40 seconds or until smooth.
2. Grease cast iron corn pone pan.
3. Preheat the oven to 375°F.
4. Warm cast iron pan for 5 minutes.
5. Pour the batter in the greased pan and bake for 8-10 minutes or when they are fully cooked and golden brown.
6. Tip the pan gently on to a clean towel and allow the corn sticks to cook for 10 minutes.
7. Repeat the greasing and baking process until all of the batter is used.
