Creole Tartar Sauce
INGREDIENTS
For aioli:
• 2 egg yolks
• ½ tbsp. chopped garlic
• 1 ½ tbsp. Dijon mustard
• 1/3 cup lemon juice
• 3 tbsp. water
• 1 ½ tsp. salt
• 2 cups pomace olive oil
For tartar sauce:
• 2 tbsp. capers
• 2 tbsp. chopped pickles (of choice)
• 1 tbsp. pickle juice (from pickles), mixed with 2 tsp sugar to dissolve
• ½ red onion, finely minced
• 4 scallions, finely chopped
• 1 tsp. paprika
PROCEDURE
1.Add all ingredients in a bowl, mix together.
2.Leave mixture in refrigerator for at least 2 hours and add seasonings as needed.
