Ingredients
• 4 peaches, pitted and sliced into ¼- to ½-inch slabs
• 3 teaspoons olive oil
• 1 teaspoon balsamic vinegar
• Kosher salt to taste
• Freshly ground black pepper to taste
Procedure
After preparing the peaches, combine the remaining ingredients using a fork to mix thoroughly. Coat the peaches on both sides with the balsamic blend and allow them to marinate for 30 minutes at room temperature.
Preheat your grill to medium high and brush with wire brush to remove all nastiness. Rub with a paper towel coated with vegetable oil to lubricate the grates and assist in preventing stickage.
Remove the peaches from the marinade and shake off the excess. Carefully place on the grill with your tongs or spatula facing 10 o’clock.
After two to four minutes, carefully lift the peach with tongs or spatula in same position, and move to 2 o’clock position. This will provide perfect grill marks.
After four to eight minutes (or once the peaches are nicely marked on one side), flip to the other side and repeat the process. Remove and shingle onto a serving platter.
These peaches are super simple and delicious. They make an excellent accompaniment to salads, seafood and poultry dishes. Enjoy!
