Homemade meatloaf sliders with cheddar cheese and pickles

SERVES: 1 meatloaf, 20 – 24 sliders

INGREDIENTS:

• 1 1/2 pounds ground beef
• 1 small clove garlic, minced
• 1/3 cup finely diced onion
• 1 Tbs chopped fresh thyme or 1/2 tsp dried thyme
• 3 slices white bread, crusts removed and finely cubed (approx. 2 cups)
• 1 large egg
• 1/2 cup barbeque sauce
• 1 Tbs Dijon mustard
• 1 cup heavy cream (or 1/2 cup would be fine if you like)
• Salt and pepper
• Slider rolls or dinner rolls to serve
• Barbeque sauce for garnish
• Sliced cheddar cheese for garnish
• Bread and butter pickles for garnish

PROCEDURE:

1. Preheat the oven to 350 degrees and then use a large mixing bowl to combine 1 1/2 pounds of ground beef with 1 small minced clove of garlic, 1/3 cup finely diced onion, 1 optional Tbs chopped fresh thyme (or 1/2 tsp dried thyme), 3 slices finely cubed crustless white bread, 1 large egg, 1/2 cup bbq sauce, 1 Tbs Dijon mustard, 1 cup heavy cream, a little salt and pepper and mix it up.

2. Add the mixture to a 9 x 5-inch loaf pan and place that on the center rack of the preheated oven.

3. It'll take just about 1 hour to bake. You'll want it somewhere between 160 and 165 degrees in the center when it is done and then let it cool down.

HINTS: You can cool the meatloaf down in the fridge so it is easier to slice. You can buy small hamburger rolls especially made for sliders or use little dinner rolls and, after rewarming the individual slices in the oven or underneath the broiler, it's up to you if you want to melt a little cheese on top of each slice and serve it up with something like bbq sauce and sliced pickles.
