RALEIGH—Rex Healthcare is serving up new options in their cafeteria to give their diners smarter, healthier choices. The days of fried foods will soon be a thing of the past.

It is lunch time at Rex Healthcare, but the daily special is a little different this time around. For the next eight weeks the Courtyard Cafe will be home to Fryless Fridays. The restaurant is doing away with the greasy filled foods and transitioning into healthier options.

“We've taken our fryers off line and we're going to make all baked items today. Right now a typical portion of our french fries is around 24 grams of fat, our baked wedges will be 4 to 6 grams of fat,” said Rex Healthcare chef Jim McGrody.

Currently, diners are pleased with the new menu. They say the selection takes their everyday lunch break to a whole new level.

“The food is always good here. I'm glad they're doing this so I can make the right choice and not be tempted to do the wrong thing,” said Joan Burroughs.

One of the ways Rex is cutting calories is with substitution. They are baking instead of frying and using vegetable broth instead of your traditional cooking oil. Rex Healthcare officials say they are the first hospital in the state to make the change.

It is a new trend seen in other medical center cafes across the country.

“There's a large system in Pennsylvania that did this about a year ago. They've seen an increase in sales since they did it,” said McGrody.

Rex Healthcare serves about 3,500 people in its cafeteria everyday.
